Super Satisfying Super Salad
40g salad leaves
40g fresh spinach
sliced cucumber (around 3cm)
30g diced red onion
20g tinned lentils (drained and rinsed)
40g broccoli florets
40g light baby mozzarella
handful of pine kernels
two pinches of chopped parsley
half handful of fresh basil leaves
15ml PizzaExpress famous Light House Dressing
50g salmon fillet or half small chicken breast (optional)
Containing four portions of vegetables and just 337 calories, PizzaExpress Superfood Salad screams summer. It’s just been given a delicious makeover as part of the PizzaExpress Spring/ Summer menu and is the perfect dish to have a go at recreating at home.
Packed with nutritious ingredients including baby spinach, beetroot, light baby mozzarella, avocado, pine kernels, cucumber, lentils, fresh basil and PizzaExpress Light House Dressing, this summery salad adds up to just 337 calories. For a little extra protein, chicken can be added, taking it to 385 calories, or salmon fillet, taking it to a modest 451 calories and upping the Omega-3 content.
1 Place a layer of salad leaves on a large plate, followed by the fresh spinach.
2 Add the sliced cucumber and red onions along with the avocado.
3 Scatter over the mix the cooked lentils and then layer on the broccoli.
4 Place the light mozzarella on top, followed by the slices of beetroot and a sprinkle of pine kernels.
5 If you want to add 50g of salmon or half a chicken breast, do so now.
6 Finish with parsley and basil leaves.
7 Drizzle with PizzaExpress Light House Dressing.
